Crunchy Granola with Honey and Pecans

I haven't posted anything for far too long. To be honest, I did not like any pictures I took and felt un inspired. Then exams happened, christmas cooking and family and before you know it weeks go by. I know everyone is talking about their resolutions and goals and I am late to that but I definitely want to be more consistent on here to develop my recipes and food photography.



I thought granola would be a perfect first recipe of the year. As we all know holidays gave us all a food coma. This is fresh and healthy start to the year (2 weeks later). I have attempted to make granola few times and was never satisfied but finally with experimentation I got it right and I hope you enjoyed it as much as I do. If I make changes to the recipe as I come up with different combination Ill add it to this.




Ingredients:

4 cups rolled oats

1/2 cup Vegetable oil

1/3 cup Honey

1 Tbsp Brown sugar

Pecan

Walnuts

2 tsp Cinnamon (alternative)

Mixed dried fruits (alternative)


Method

1. Place the oil and honey together in a bowl (if you adding cinnamon add it in now)

2. In a separate bowl measure out the oats. (important that you use large variety as the porridge oats will burn quickly, I learned that the hard way)

3. Mix the dry and wet ingredients together

4. Add the nuts in (I did not add a quantity here as it depends on personal taste) you can also add dried fruits at this stage if you like

5. Mix thoroughly until all the oats are coated

6. Place baking paper on your tray and transfer the oats

7. Press down with a spatula so its compact

8. Put in preheated oven at 160 degrees on the bottom of the oven (This is an important part of granola as if you cook it for too long it will burn)

9. Check after 10 minute mark (it will start to brown at the edges) do not stir

10. I had mine in the oven for 23 minutes exactly but it depends on what type of oven you have

11. Let it cook down for 20 minutes and break into the desired pieces

12. Lasts up to 2 weeks in air tight container

You can enjoy the granola with milk or natural yoghurt
