Heart Shaped Linzer Cookies filled with Jam

Valentines series #1

I thought it would fun idea to start a valentines mini series in preparation to the upcoming date. I will be posting couple of my favourite recipes from cookies to handmade chocolates that you can share with your loved one. At the end of the series I will give you an idea of different gift boxes you can create with the handmade treats and give it a personal touch. The first recipe on the series are this linzer style cookies. They are from Bea's Cookbook page. (if you don't follow her you should definitely do!). I tried this cookies during christmas time and they were all gone within minutes. They are easy to make and are super tasty. For the valentines occasion I am using raspberry jam (for the red colour) and of course the heart shapes. Lemon curd is also delicious filling. The shapes and flavourings are versatile so which ever your loved one likes.



Ingredients: Makes 20 cookies
250g plane flour
150g unsalted softened butter
55g icing sugar
50g ground almonds
1 small egg
1 tsp vanilla paste (optional)
Method:
1. Put the soft butter, sugar and vanilla (if using) in a bowl.
2. With electric hand mixer, beat until the mixture is pale and creamy
3. Add the egg and beat further 3 minutes
4. Add the flour and almonds and beat on slow speed until combined (don't over mix the dough)
5. Divide the dough and roll out into flat discs (this will help later when rolling it out)
6. Dust the clingfilm with a bit of flour and wrap the dough
7. Place in the fridge for 30 min (or until the dough is firm)
8. Once ready take the dough out and preheat the oven 180 C
9. Roll out the dough to a coin thickness ( The dough rises sightly in the oven so you don't want to make them too thick, if they are too thin they fall apart easier)
10. In the recipe Bea cuts out around 6cm circles, I used a heart shaped cutter. You can make them any size you like
11. With the first half of the dough cut out the circles (hear shaped cookie cutter)
12. Place the cookies on a tray lined with baking paper and bake for 8/10 minutes (keep an eye on the oven so they don't brown too quickly and make sure your oven is not too hot)
13. With the second part of the dough you will again roll it out and cut out the circles (hear shapes)
14. This time you will cut out small heart shapes out of the larger heart shape
15. Bake them and cool all the cookies on a wire rack (make sure they are cooled completely before filling them)
16. Spread teaspoon of jam on the bottom part of the cookie and place the heart shaped on top to sandwich them together.
17. Dust with icing sugar et voila!
